What yummy things can I make from tomatoes?

Tomatoes are the key ingredient in many types of food that we eat! Check out a few ideas for different recipes that you can make from the tomatoes that you have grown!

  • Recipe makes approximately 2 servings. Feel free to double or triple the recipe to make more!

    Difficulty: Easy

    INGREDIENTS:

    • 1 cup chopped cherry tomatoes
    • 1/3 cup finely chopped red onion
    • 2 garlic cloves, minced
    • 1/2 lime, juiced
    • 1 tsp Cumin
    • Salt and Pepper, to taste

    OPTIONAL INGREDIENTS:

    • Chopped cilantro, to taste
    • Chopped fresh or pickled jalapeño, to taste

    INSTRUCTIONS:

    1. Combine tomatoes, onions, and garlic in a bowl.

    2. Add 1 tsp of cumin, juice of 1/2 lime, and salt and pepper to taste.

    3. Stir all ingredients well.

    4. If adding chopped cilantro or chopped jalapeño, add them a bit at a time to your desired taste.

    5. Serve with tortilla chips, quesadillas, tacos, or whatever you prefer!

    TOMATO, MOZZARELLA, & BASIL NAAN BREAD PIZZA

    Difficulty: Easy

    INGREDIENTS:

    • 1 garlic naan bread
    • 1/2 cup cherry tomatoes, halved
    • Pizza sauce (store bought) 2-4 Tablespoons, to taste
    • Sliced or shredded mozzarella cheese
    • Salt and pepper, to taste

    • Roughly chopped fresh basil leaves

    INSTRUCTIONS:

    1. Preheat oven to 425F. 

    2. Evenly spread pizza sauce over the top of the naan bread with a spoon (not too thick, it can make the naan crust soggy!)

    3. Sprinkle approximately 1/4th cup shredded mozzarella cheese over the top of the pizza to taste. You can also use slices of whole mozzarella if you prefer.

    4. Top with your lovely sliced cherry tomatoes.

    5. Place the naan pizza on a cooking sheet and place on the middle oven rack. Check the pizza after 8 - 10 minutes for desired doneness - add a few extra minutes for a crispier, more well done pizza.

    6. Once finished cooking, add fresh basil leaves to the top.

    7. Slice and serve!


    PROSCUITTO, TOMATO, FETA, ARUGULA PIZZA

    Difficulty: Medium

    INGREDIENTS:

    • 1 garlic naan bread (store bought)
    • Pizza sauce (store bought) 2-4 Tablespoons, to taste
    • Sliced or shredded mozzarella cheese
    • 1/2 cup sliced cherry tomatoes
    • 4(ish) slices of prosciutto
    • 1/4 cup feta cheese crumbles
    • Handful of arugula

    OPTIONAL INGREDIENTS:

    Balsamic glaze

    INSTRUCTIONS:

    1. Preheat oven to 425F. 

    2. Evenly spread pizza sauce over the top of the naan bread with a spoon (not too thick, it can make the naan crust soggy!)

    3. Sprinkle approximately 1/4th cup shredded mozzarella cheese over the top of the pizza to taste. You can also use slices of whole mozzarella if you prefer.

    4. Top with your lovely sliced cherry tomatoes, prosciutto, and feta cheese.

    6. Once finished cooking, add fresh arugula leaves to the top. If using the optional balsmic glaze, squirt a small amount evenly across the top of the pizza.

    7. Slice and serve!

    INGREDIENTS:

    • 1/2 cup cherry tomatoes, halved
    • 2 slices of your favorite bread
    • 2 slices cheddar cheese
    • 1 tablespoon butter or margarine

    INSTRUCTIONS:

    1. Lay our your bread slices on the counter or a plate.

    2. Spread the butter on one side of each bread slice.

    3. Assemble the sandwich (butter to the outside,) with the slices of cheddar cheese and cherry tomatoes.

    4. Put a skillet over med heat on your stovetop.

    5. Place the sandwich in the skillet and cook until underside is toasted and cheese starts to melt. Flip the sandwich and cook until browned and cheese is melted.

    6. Time to chow down!

    INGREDIENTS:

    • 1 cup chopped cherry tomatoes
    • 1/2 chopped red bell pepper
    • 1/2 chopped cucumber
    • 2 Tablespoons finely chopped red onion
    • 2 Tablespoons chopped pitted Kalamata olives
    • 2 Tablespoons extra-virgin olive oil
    • 1 tablespoon red wine vinegar
    • 1 garlic clove, minced
    • 1/4 teaspoon dried oregano, more for sprinkling
    • Salt and pepper to taste
    • 1/4 cup crumbled feta cheese

    INSTRUCTIONS:

    1. In a medium sized bowl, add the tomatoes, bell pepper, cucumber, red onion, and olives.

    2. Mix together the olive oil, vinegar, garlic, and oregano.

    3. Drizzle the olive oil mixture over the ingredients in the bowl, and lightly toss to combine.

    4. Season with salt and pepper to taste.

    5. Top with feta cheese crumbles.

    6. Enjoy!
